Buttermilk Crepes

I grabbed this recipe from my friend. It is amazing! It is not the simplest crepe recipe but it is worth the time to spend to make them. These crepes are so beautiful with all those little bubbles on the surface. Just look at the photos! Thanks to buttermilk they have sour-sweet taste and are pretty nourishing. They are perfect with autumn flavoured jams or just with honey and hot tea.

Buttermilk crepes

250 ml buttermilk
1/2 whole milk
1 egg
1 cup self-raising flour
1/2 tbsp sugar
1/4 salt
1/2 baking powder
1 tbsp butter

Pour the buttermilk into the saucepan and heat until warm (not hot!). Add the egg, sugar, salt, baking powder and mix well.
Sift in the flour while stirring constantly. You need to get a thick enough batter without lumps.
Pour the milk into another saucepan and bring it to the boil. Then pour it into the batter gradually.
If the batter is too liquid add extra flour.
Melt the butter in a pan and pour into the batter stirring constantly.
Fry your crepes for about 0.5-1 minute on the each side on the medium heat until golden brown. Use a special crepe pan or on a non-stick pan without butter. In other case spread your pan with a piece of butter.
Serve warm with jam!
