These weeks were so cloudy in Kiev. I like such weather but more than it I like to bake something aromatic and eat it with cup of warm tea or coffee (I prefer a few cups of cappuccino, much more than it’s normal). I like savoury pastry and after my good experience with english scones (I shared ones with herbs there) I decided that it would be great to mix some dried tomatoes and feta in scones. When I was a kid, my family loved to go in the woods in search of mushrooms. I couldn’t wait for  those little travels. Mom usually stayed near the car, when me and my dad took the baskets and knives, walked into the woods in search of mushrooms. These were really magical moments – finding a very big mushroom yourself! After that we returned with a basket full of mushrooms (in our area boletus were more spread than other mushrooms), we went home, washed and cleaned mushrooms for the whole evening, and waited for the best delicious dinner from my mom. My mother and granny often baked some special cookies for me, when I was a little girl. That cookies were called “Fantasy”. I loved the well baked crispy and berry stuffing. Mom usually cooked them with blackcurrant jam. But I decided to modify this option and added fresh berries and add some lemon zest and lemon juice, because I love how the lemon emphasises the taste of berries. It’s a new version of cookies from my childhood, but it’s so lovely! By the way, you can use any berries you like for stuffing. And I advice you to adjust the amount of sugar to your own taste, because personally I prefer the sour stuffing with sweet dough.
