Hi there! I haven’t posted recipes for too long and to be honest I miss it a lot. I’ve had an amazing holiday and now I feel like I might post recipes every single day. The first thing that I wanted to cook after returning was a pie. Flavour homemade pie filled with no matter what, but with crumble crust, and certainly sweet. As apricots are in season and I feel so “over-berried” now I decided to make an apricot pie. I made it with wholegrain crust and added some cinnamon to the filling. I was always interested in finding some new ways to use seasonal vegetables in particular manner. That’s why I like when vegetables and pastry are combined. I’m kind of a quiche-obsessed person. Because I think it’s a very good nourish breakfast, like a breakfast 3-in-1. It’s also such a fun thing to choose pie filling. Fish or meat, or just vegetables… Vegetable pies are my favourites (like Spinach-Feta pie or Quiche Lorraine).

Strawberry season seems to never end. To be honest I would say that I wanted to make some flourless treats with strawberries, but few days ago I made amazingly crumbly cookies and I decided to mix these two parts. I told you so many times how much I love courgette fritters, did I? This is one of my top-5 breakfast things. I make courgette fritters at least twice a week. I never get enough of them. Also they are so easy to make! It should be a healthier version with oven-roasting, but I like to fry them on non-stick pan and always add some dill or chives. I recommend to serve courgette fritters with soured cream or creme fraiche. Have a look!
