Generally I’m not a “pancake-fan”. But there are lazy days (a few times in a month), when I want to make the simplest and more quickly – prepared breakfast. My choice is the pancakes with berries. Why? Because it’s simple.
I always have some flour, butter and milk in my kitchen. Just mix them and bake! Secondly, I make these pancakes for about 10-15 minutes. What is the simpler? And they always smell so good, that I wake up completely, while I bake them. It’s kinda my lazy breakfast.
P.S. If you serve them with cranberries (the most xmas berry for me!) and powdered sugar you will be full of Christmas spirit!
Cranberry Mini-Pancakes
(serves 10-12)
200 g flour 3 tbsp sugar 2 tsp baking powder pinch of salt 1 tbsp vanilla extract (or vanilla sugar) 300 ml milk 1 egg 30 g butter (melted) 1/2 cup cranberries FOR SERVING: 1-2 tbsp sugar powder or 1-2 tbsp natural yogurt
Mix flour, sugar, baking powder and salt in a large bowl. Whisk an egg and milk in the saucepan. Add this mixture to the dry ingredients, mix well and let stand in room temperature for about 15-20 min. Add berries, vanilla extract and melted butter. Mix and fry until brown on a medium heat, using 2-3 tbsp batter for the each pancake.
Serve warm with powdered sugar or natural yogurt.
