Plum Pie with Almond Crust

Sometimes there are situations when some friends or parents call you, and say that they will visit you right now. If I have only tea (it happens with me sometimes) it’s really problem for me, because I don’t like to host guests without treating them with something tasty. I have a couple of simple and quick recipes for situations like this! And I want to share one of them with you.

Plum Pie with Almond Crust

(24 сm diameter)
150 g unsalted butter (room temperature)
150 g flour
100 g sugar
3 eggs
1/4 tsp salt

FILLING:
10-12 plums (best not too mature)

FOR ALMOND CRUST:
20 g unsalted butter + some more to grease the pan
40 g sugar
40 g almond flour

At first, prepare almond crumbs. Melt butter in the small pan, add sugar. When it becomes golden brown, add ground almonds and stir quickly. Remove the pan from the heat, stirring for crumbs not sticking to the bottom of the pan. Set aside.
For dough. Whisk butter and sugar until whitening, add eggs one at a time, continuing to whisk. Add flour and salt. You should have a thick dough. Cut plums into pieces, add to the dough and knead gently.
Grease with butter the baking pan (24 cm in diameter) and sprinkle well with ground almonds. Put the dough in it. Top with a layer of crumbs, we prepared first. Smooth the surface of the future pie.
Preheat oven 180 degrees. Bake pie about 40-50 min until crust will be golden brown. Check if ready with a toothpick.
