Today is my absolutely happy Sunday! We’ve got up very early (if only you knew how I love early mornings!) packed some food into backpacks and will come out soon for the all day long walk in the park.
I really love walking. Yesterday I walked 7 km with my beagle Chantal and today I want more!
Fresh air, blackbird’s singing, Nick’s smile, my dog’s barking, picnic on the grass… these things make me an absolutely happy girl. Nothing is better than to eat some homemade food outdoor. In most cases we take some french and english cheeses, fresh bread or croissants and fruits. Sometimes I make wraps (with green salad, salmon, cucumber and hummus is my favourite) or just sandwiches.
What do you know about the perfect pie? What it should be for you? My main pie-rules are: the pastry is melting-in-your mouth, not over-dry filling, crispy crust. I usually make pies for breakfast preparing dough at the evening before. I make filling and bake my pie in the morning. It saves a lot of time.

These weeks were so cloudy in Kiev. I like such weather but more than it I like to bake something aromatic and eat it with cup of warm tea or coffee (I prefer a few cups of cappuccino, much more than it’s normal). I like savoury pastry and after my good experience with english scones (I shared ones with herbs there) I decided that it would be great to mix some dried tomatoes and feta in scones. This scones are perfect for men’s breakfast with ham for example or cream cheese.

Today I want to share a recipe of interesting french pie – Quiche Lorraine. This is a traditional french pastry. It preparing from the simplest and chip ingredients. I think this is one of those pies, in which you can fall in love or be disappointed. I fell in love with quiche lorraine and cook it sometimes. The main ingredient in this pie is stewed onions! It’s taste like stewed cabbage, but softer. You can add or no the cheese, as your like. When I was a kid, my family loved to go in the woods in search of mushrooms. I couldn’t wait for those little travels. Mom usually stayed near the car, when me and my dad took the baskets and knives, walked into the woods in search of mushrooms. These were really magical moments – finding a very big mushroom yourself! After that we returned with a basket full of mushrooms (in our area boletus were more spread than other mushrooms), we went home, washed and cleaned mushrooms for the whole evening, and waited for the best delicious dinner from my mom. I do love family traditions, especially related to cooking. In our family, there is one. It’s Sunday pancakes (precisely crepes, because i prefer thin pancakes). I can just wait for the weekend to decide what kind of pancakes to cook. And I want to share one of my favourites recipes of crepes. Today’s crepes are stuffed with chestnut mushrooms and blue cheese. They taste so delicate and smells amazingly thanks to blue-cheese.
I advise you to make the batter at the evening before, and in the morning only to bake crepes and put the filling, so you can sleep a little longer)
Tart Tatin is upside-down cake with caramelised apples. I don’t like apples in the pastry and this tatin with beets caught my attention. I never used them in baking, but now I fell in love with this tart. Sweet beets with caramel flavour on a gentle crust. I advice you to serve with sour cream or yogurt, they suit perfectly.To be honest, this is my first Tart Tatin and I can confidently say that it is quite simple to prepare, if done carefully. It can be a great breakfast or appetizer. You will not stay indifferent!
